Italian pizza quattro formaggio
It is really easy to make your own pizza dough. Just follow the recipe, then top with pizza sauce and your favourite Frico cheeses to custom make your own pizza.

For the base:

  • 225 g (8 oz) strong plain white flour
  • 3 g (½ tsp) salt
  • 3 g (½ tsp) fast- action dried yeast
  • 150 ml (¼ pt) warm water
  • 15 ml (1 tbsp) extra-virgin olive oil

Alternatively, you can buy a ready-made dough 


For the topping:

  1. Place the flour, salt and yeast in a large mixing bowl and make a well in the centre. Using a wooden spoon, stir in the water and olive oil to form a dough. Place the dough on a lightly floured surface and knead for 7- 10 minutes until smooth and elastic.
  2. Place the dough in a lightly oiled bowl, cover with cling film and leave to rise in a warm place for 1 hour, or until doubled in size.
  3. Preheat the oven to 220ºC, 450ºF, gas mark 7.
  4. Using your fi st, punch the dough to knock out the air bubbles. Knead on a lightly fl oured surface, then using a rolling pin, roll out to a 30cm (12 inch) circle.
  5. Place on a lightly greased baking sheet, then top with the pizza sauce and the Frico cheeses.
  6. Bake on the top shelf for 10-15 minutes until the dough is crisp and golden and the cheese is bubbling.
